Ingredients
- 1 cup lentils (cooked)
- 2 cups vegetable broth
- 1 large sweet potato (peeled and cubed)

- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, sauté onion and garlic in olive oil until soft.
- Add lentils, broth, sweet potato, and quinoa. Stir well.
- Season with thyme, rosemary, salt, and pepper.
- Transfer mixture to a baking dish and bake for 30 minutes.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- You can substitute sweet potato with butternut squash.
- For extra flavor, add a splash of soy sauce.
- Store leftovers in an airtight container for up to 3 days.
