Ingredients

  • 1 cup lentils (cooked)
  • 2 cups vegetable broth
  • 1 large sweet potato (peeled and cubed)
  • 1 cup quinoa (uncooked)
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, sauté onion and garlic in olive oil until soft.
  3. Add lentils, broth, sweet potato, and quinoa. Stir well.
  4. Season with thyme, rosemary, salt, and pepper.
  5. Transfer mixture to a baking dish and bake for 30 minutes.
  6. Remove from oven and let rest for 5 minutes before serving.
