Ingredients
- 1 lb pasta of your choice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 1 tbsp butter
- 1/2 cup butternut squash, cubed
- 1/4 tsp nutmeg
- 1/2 cup spinach
- 1/4 cup pine nuts
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add garlic and mushrooms, sauté until soft.
- Pour in heavy cream and stir in parmesan cheese until melted. Season with salt and pepper.
- Toss the cooked pasta in the sauce until well coated.
- In a separate pan, melt butter and sauté butternut squash until tender. Sprinkle with nutmeg.
- Add spinach and pine nuts, cook until spinach wilts.
- Combine with the pasta or serve as a topping.
- Enjoy warm.
