Ingredients

- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 2 cups chopped seasonal vegetables (squash, sweet potatoes, etc.)
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and meat. Cook until browned.
- Pour in broth and diced tomatoes. Bring to a boil.
- Add salt, pepper, thyme, bay leaf, and seasonal vegetables.
- Reduce heat and simmer for 30-40 minutes.
- Remove bay leaf before serving.
