A quick and easy breakfast burrito made in the air fryer, perfect for busy mornings.
Ingredients
- 2 large flour tortillas
- 4 eggs
- 1/2 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked sausage or bacon (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 350°F (175°C).
- Heat olive oil in a pan over medium heat. Sauté bell peppers and onions until soft.
- Beat eggs, salt, and black pepper in a bowl. Pour into the pan with vegetables and scramble until cooked.
- Warm tortillas in the air fryer for 30 seconds.
- Fill each tortilla with scrambled eggs, cheese, and optional meat.
- Roll into burritos, tucking in the sides as you go.
- Place burritos seam-side down in the air fryer basket. Cook for 5-7 minutes until crispy.
- Serve warm.
Notes
- Use whole wheat tortillas for a healthier option.
- Add hot sauce or salsa for extra flavor.
- Store leftovers in the fridge for up to 2 days. Reheat in the air fryer for best results.
