Description

Crispy on the outside and creamy on the inside, these air fryer twice-baked potatoes are a delicious twist on a classic side dish.


Ingredients

  • 2 large russet potatoes
  • 1 tbsp olive oil
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp chopped chives
  • 1/4 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Rub potatoes with olive oil and prick with a fork.
  3. Air fry potatoes for 40 minutes, turning halfway.
  4. Cut potatoes in half lengthwise and scoop out flesh.
  5. Mix potato flesh with sour cream, cheese, butter, chives, salt, and pepper.
  6. Spoon mixture back into potato skins.
  7. Air fry for 10 more minutes until golden brown.

Notes

  • Choose potatoes of similar size for even cooking.
  • Let potatoes cool slightly before handling.
