Description

A hearty and comforting soup perfect for cold winter days, inspired by Amish traditions.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups beef broth
  • 2 cups water
  • 1 can diced tomatoes (14 oz)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 cups egg noodles


Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Pour in beef broth and water. Bring to a boil.
  4. Stir in diced tomatoes, corn, peas, salt, pepper, and thyme.
  5. Reduce heat and simmer for 20 minutes.
  6. Add egg noodles and cook for 10 more minutes.
  7. Serve hot.

Notes

  • You can substitute ground turkey for beef.
  • Add more broth if you prefer a thinner soup.
