Description
Soft apple cider cookies with a creamy caramel filling, perfect for fall.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 cup apple cider
- 1 tsp vanilla extract
- 1/2 cup caramel sauce
- 1/2 cup powdered sugar
- 4 oz cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat butter, brown sugar, and granulated sugar until fluffy.
- Add egg, apple cider, and vanilla. Mix well.
- Gradually mix dry ingredients into wet ingredients until combined.
- Drop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes. Let cool.
- For the filling, beat caramel sauce, powdered sugar, and cream cheese until smooth.
- Spread filling on half the cookies, then top with remaining cookies.
Notes
- Chill dough for 30 minutes for easier handling.
- Store filled cookies in the fridge.
- Use fresh apple cider for best flavor.
