Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce
  • 1/2 cup powdered sugar
  • 4 oz cream cheese, softened


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat butter, brown sugar, and granulated sugar until fluffy.
  4. Add egg, apple cider, and vanilla. Mix well.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Drop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes. Let cool.
  8. For the filling, beat caramel sauce, powdered sugar, and cream cheese until smooth.
  9. Spread filling on half the cookies, then top with remaining cookies.
