Description

Authentic Belgian slow-cooked beef stew is a hearty and flavorful dish perfect for cold days. This recipe brings out the rich taste of beef with a blend of herbs and vegetables.


Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 cup dark beer
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté onions and garlic until softened.
  3. Add carrots and potatoes, and cook for 5 minutes.
  4. Return the beef to the pot. Add beef broth, dark beer, tomato paste, bay leaves, and thyme. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours, until the beef is tender.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a richer flavor, marinate the beef in beer overnight.
  • You can substitute beef broth with vegetable broth if preferred.
