Ingredients

  • 1 pound ziti pasta
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped zucchini
  • 1 cup chopped bell peppers
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F.
  2. Cook ziti according to package directions.
  3. Sauté vegetables in olive oil until tender.
  4. Mix cooked pasta with marinara sauce, ricotta, and vegetables.
  5. Transfer to baking dish and top with mozzarella and Parmesan.
  6. Bake for 20 minutes until cheese melts.
  7. Let cool for 5 minutes before serving.
