Description
A hearty baked pasta dish loaded with vegetables and cheese.
Ingredients
- 1 pound ziti pasta
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup chopped zucchini
- 1 cup chopped bell peppers
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- Cook ziti according to package directions.
- Sauté vegetables in olive oil until tender.
- Mix cooked pasta with marinara sauce, ricotta, and vegetables.
- Transfer to baking dish and top with mozzarella and Parmesan.
- Bake for 20 minutes until cheese melts.
- Let cool for 5 minutes before serving.
Notes
- Use whole wheat ziti for extra fiber.
- Add spinach for more greens.
- Freezes well for up to 3 months.
