A rich and creamy fusion of Basque cheesecake and fudgy brownies, creating a decadent dessert with a caramelized top and gooey center.
Ingredients
- 200g dark chocolate (70% cocoa)
- 150g unsalted butter
- 200g granulated sugar
- 3 large eggs
- 100g all-purpose flour
- 30g cocoa powder
- 1 tsp vanilla extract
- 250g cream cheese
- 100g powdered sugar
- 1 egg yolk
Instructions
- Preheat your oven to 180°C (350°F). Line an 8-inch square baking pan with parchment paper.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and set aside.
- Whisk granulated sugar and eggs in a bowl until pale and thick. Fold in the melted chocolate mixture.
- Sift flour and cocoa powder into the batter. Mix until just combined. Pour half the brownie batter into the pan.
- In a separate bowl, beat cream cheese, powdered sugar, and egg yolk until smooth. Spread the cheesecake layer over the brownie batter.
- Top with the remaining brownie batter. Use a knife to swirl the layers slightly.
- Bake for 30-35 minutes until the edges are set but the center is slightly jiggly.
- Let cool completely before slicing. Serve at room temperature.
