Description
A creamy and flavorful hummus made with coconut for a unique twist.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup coconut milk
- 2 tbsp tahini
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp cumin
- 2 tbsp olive oil
- 1 tbsp shredded coconut (optional)
Instructions
- Add chickpeas, coconut milk, tahini, garlic, lemon juice, salt, and cumin to a food processor.
- Blend until smooth, scraping down the sides as needed.
- With the processor running, drizzle in olive oil until well combined.
- Transfer to a bowl, sprinkle with shredded coconut if desired, and serve.
Notes
- Store in an airtight container in the fridge for up to 5 days.
- Adjust salt and lemon juice to taste.
- For a thinner consistency, add more coconut milk.
