A hearty and flavorful vegetable beef soup that’s easy to make and perfect for any occasion.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes until softened.
- Pour in beef broth and diced tomatoes. Stir well.
- Add green beans, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes until vegetables are tender.
- Serve hot and enjoy.
Notes
- You can substitute ground beef with ground turkey for a lighter version.
- Add potatoes or corn for extra heartiness.
- Store leftovers in an airtight container for up to 3 days.
