Delicious and moist lemon poppy seed muffins that are perfect for breakfast or a snack.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp poppy seeds
- 1 tbsp lemon zest
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, poppy seeds, lemon zest, baking soda, and salt.
- In another bowl, whisk melted butter, eggs, buttermilk, lemon juice, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Divide batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Use fresh lemon zest for the best flavor.
