Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp poppy seeds
  • 1 tbsp lemon zest
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, poppy seeds, lemon zest, baking soda, and salt.
  3. In another bowl, whisk melted butter, eggs, buttermilk, lemon juice, and vanilla extract.
