Description
A hearty dish with tender chicken smothered in a rich gravy served over fluffy rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp paprika
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, paprika, and thyme.
- Brown chicken on both sides, then remove from the skillet.
- Add onion, garlic, and bell pepper to the skillet. Sauté until softened.
- Stir in rice, chicken broth, and cream of chicken soup.
- Return chicken to the skillet, nestling it into the rice mixture.
- Cover and simmer for 25-30 minutes until rice is tender and chicken is cooked through.
- Serve hot.
Notes
- For extra flavor, use homemade chicken broth.
- Add a splash of hot sauce if you like spice.
