Birria Tacos (Chilaquiles) are a flavorful Mexican dish combining tender, slow-cooked meat with crispy tortillas in a rich, spicy broth.
Ingredients
- 2 lbs beef (chuck roast or brisket)
- 6 dried guajillo chilies
- 3 dried ancho chilies
- 4 cloves garlic
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 4 cups beef broth
- 12 corn tortillas
- 1 onion, chopped
- 1/2 cup cilantro, chopped
- 2 limes, cut into wedges
Instructions
- Soak dried chilies in hot water for 20 minutes.
- Blend soaked chilies, garlic, cumin, oregano, and salt into a smooth paste.
- Brown the beef in a pot, then add the chili paste and beef broth.
- Simmer for 3 hours until the meat is tender.
- Shred the meat and reserve the broth.
- Dip tortillas in the broth and fry until crispy.
- Fill the tacos with shredded meat, onion, and cilantro.
- Serve with lime wedges and extra broth for dipping.
