Description

A hearty and comforting casserole that combines biscuits and vegetables in a savory pot pie filling.


Ingredients

  • 2 cups mixed vegetables (carrots, peas, corn, green beans)
  • 1 cup diced potatoes
  • 1 cup diced chicken or vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can refrigerated biscuits


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat.
  3. Add the flour and whisk until smooth. Cook for 1 minute.
  4. Gradually add the broth and milk, stirring constantly until the mixture thickens.
  5. Add the vegetables, potatoes, salt, and pepper. Stir to combine.
  6. Pour the mixture into a greased casserole dish.
  7. Place the biscuits on top of the vegetable mixture.
  8. Bake for 20-25 minutes or until the biscuits are golden brown.
