Ingredients
- 1 cup black rice
- 2 cups water
- 1 tbsp olive oil
- 1 avocado, sliced
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse the black rice thoroughly.
- In a pot, combine rice and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Once cooked, fluff the rice with a fork and let it cool slightly.
- In a large bowl, mix the rice with olive oil, lime juice, salt, and pepper.
- Add corn, black beans, bell pepper, cherry tomatoes, and cilantro. Toss gently.
- Top with avocado slices before serving.
