Ingredients

  • 1 cup black rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 avocado, sliced
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste


Instructions

  1. Rinse the black rice thoroughly.
  2. In a pot, combine rice and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Once cooked, fluff the rice with a fork and let it cool slightly.
  4. In a large bowl, mix the rice with olive oil, lime juice, salt, and pepper.
  5. Add corn, black beans, bell pepper, cherry tomatoes, and cilantro. Toss gently.
  6. Top with avocado slices before serving.
