Healthy blueberry almond muffins packed with protein and fiber for a nutritious breakfast or snack.
Ingredients
- 1 cup almond flour
- 1/2 cup oats
- 1/4 cup honey
- 1/4 cup almond butter
- 1/2 cup fresh blueberries
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with liners.
- Mix almond flour, oats, baking powder, and salt in a bowl.
- Whisk eggs, honey, almond butter, and vanilla in another bowl.
- Combine wet and dry ingredients. Fold in blueberries.
- Divide batter into muffin cups. Bake for 20-25 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Substitute maple syrup for honey if preferred.
- Add nuts or seeds for extra crunch.
