Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup maple syrup
- 1 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1 cup fresh blueberries
Instructions
- Preheat oven to 375°F (190°C).
- Mix oats, baking powder, and salt in a bowl.
- In another bowl, whisk maple syrup, milk, egg, butter, vanilla, and lemon zest.
- Combine wet and dry ingredients.
- Fold in blueberries.
- Pour into a greased baking dish.
- Bake for 30-35 minutes until set.
- Let cool slightly before serving.

- Use fresh or frozen blueberries.
- Replace butter with coconut oil for a dairy-free option.
