Fluffy pancakes with ricotta cheese and fresh blueberries.
Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup ricotta cheese
- 1 large egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
Instructions
- Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix ricotta, egg, milk, and vanilla.
- Combine wet and dry ingredients. Fold in blueberries.
- Heat a skillet over medium heat. Pour 1/4 cup batter per pancake.
- Cook until bubbles form, then flip and cook until golden.

- Use room temperature ingredients for even mixing.
- Do not overmix the batter to keep pancakes fluffy.
