Description
Delicious cheesecake cupcakes with blueberries and vanilla.
Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 325°F.
- Mix graham cracker crumbs, sugar, and melted butter.
- Press mixture into cupcake liners.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time.
- Mix in vanilla extract.
- Fold in blueberries.
- Pour filling over crusts.
- Bake for 20-25 minutes.
- Chill before serving.
Notes
- Use room temperature cream cheese.
- Fresh blueberries work best.
- Chill cupcakes for at least 2 hours.
