Description
A delicious and easy-to-make pasta dish combining the flavors of bruschetta with tender chicken.
Ingredients
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, diced
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated parmesan cheese
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan and cook the chicken until no longer pink.
- Add garlic and tomatoes, sauté for 2 minutes.
- Pour in balsamic vinegar and simmer for 3 minutes.
- Stir in cooked pasta, basil, salt, and pepper.
- Sprinkle with parmesan cheese before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Add red pepper flakes for extra heat.
- Fresh mozzarella can replace parmesan.
