Description

A delicious and easy-to-make pasta dish combining the flavors of bruschetta with tender chicken.


Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan and cook the chicken until no longer pink.
  3. Add garlic and tomatoes, sauté for 2 minutes.
  4. Pour in balsamic vinegar and simmer for 3 minutes.
  5. Stir in cooked pasta, basil, salt, and pepper.
  6. Sprinkle with parmesan cheese before serving.
