Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 medium zucchinis, spiralized
- 1 cup cherry tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tbsp balsamic vinegar
- 1/4 cup shredded Parmesan cheese (optional)
Instructions
- Preheat grill or pan to medium-high heat.
- Season chicken breasts with salt, pepper, and olive oil.
- Grill chicken for 6-7 minutes per side until cooked through.
- While chicken cooks, spiralize zucchini into noodles.
- Mix tomatoes, garlic, basil, and balsamic vinegar in a bowl.
- Sauté zucchini noodles for 2-3 minutes until tender.
- Top grilled chicken with bruschetta mix.
- Serve chicken over zucchini noodles.
- Sprinkle with Parmesan cheese if desired.
