A flavorful dish combining spicy Cajun shrimp with creamy cauliflower grits. Perfect for a low-carb, high-protein meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups cauliflower, grated
- 1 tbsp Cajun seasoning
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- Salt to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat. Add shrimp and Cajun seasoning. Cook for 2-3 minutes per side until pink. Set aside.
- In the same pan, melt butter. Add garlic and sauté for 30 seconds.
- Add grated cauliflower and chicken broth. Cook for 5 minutes until softened.
- Stir in heavy cream and cook for another 2 minutes until creamy.
- Serve cauliflower grits topped with Cajun shrimp. Garnish with parsley.

- For extra spice, add hot sauce.
- Use frozen cauliflower rice for convenience.
- Substitute coconut milk for heavy cream for a dairy-free option.
