Description

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 cup milk (or plant-based milk)
  • 1 egg
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish.
  3. Mix oats, grated carrots, walnuts, raisins, cinnamon, nutmeg, and salt in a bowl.
  4. In another bowl, whisk milk, egg, maple syrup, and vanilla.
  5. Combine wet and dry ingredients.
  6. Pour the mixture into the baking dish.
  7. Bake for 30-35 minutes until set.
  8. Let cool slightly before serving.
