Ingredients
- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 1/4 cup raisins
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla extract
- 1 cup milk (or plant-based milk)
- 1 egg
- 2 tbsp maple syrup
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a baking dish.
- Mix oats, grated carrots, walnuts, raisins, cinnamon, nutmeg, and salt in a bowl.
- In another bowl, whisk milk, egg, maple syrup, and vanilla.
- Combine wet and dry ingredients.
- Pour the mixture into the baking dish.
- Bake for 30-35 minutes until set.
- Let cool slightly before serving.
Notes
- Store leftovers in the fridge for up to 4 days.
- Reheat in the microwave or oven.
- Top with yogurt or extra maple syrup if desired.
