Ingredients
- 1 head radicchio, quartered
- 4 slices rustic bread
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/4 cup grated Parmesan
- Salt and pepper to taste
- 1 tbsp balsamic glaze (optional)
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush radicchio quarters with 1 tbsp olive oil and season with salt and pepper.
- Grill radicchio for 2-3 minutes per side until charred and slightly wilted. Remove and chop.
- Toast bread slices until golden and crisp.
- Rub toasted bread with garlic and drizzle with remaining olive oil.
- Top each slice with charred radicchio and sprinkle with Parmesan.
- Drizzle with balsamic glaze if desired.
- Serve immediately.
