Ingredients
- 1 head cauliflower, chopped
- 4 cloves garlic, roasted
- 2 tbsp olive oil
- 1 onion, diced
- 4 cups vegetable broth
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Toss cauliflower and garlic with olive oil and roast for 25 minutes.
- In a pot, sauté onion until translucent. Add roasted cauliflower and garlic.
- Pour in vegetable broth and simmer for 15 minutes.
- Blend the soup until smooth. Stir in cheddar cheese and heavy cream.
- Season with salt and pepper. Serve hot.

- For extra flavor, add a pinch of smoked paprika.
- Use fresh garlic for the best taste.
