Description

A creamy and flavorful soup made with roasted garlic and cheddar cauliflower. Perfect for a cozy meal.


Ingredients

  • 1 head cauliflower, chopped
  • 4 cloves garlic, roasted
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F. Toss cauliflower and garlic with olive oil and roast for 25 minutes.
  2. In a pot, sauté onion until translucent. Add roasted cauliflower and garlic.
  3. Pour in vegetable broth and simmer for 15 minutes.
  4. Blend the soup until smooth. Stir in cheddar cheese and heavy cream.
  5. Season with salt and pepper. Serve hot.

Notes

  • For extra flavor, add a pinch of smoked paprika.
