Description

Ingredients

  • 4 cups tortilla chips
  • 2 cups cooked chicken, shredded
  • 1 cup red enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/4 cup diced onion
  • 1 jalapeño, sliced (optional)
  • 1 tbsp vegetable oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread tortilla chips in a baking dish.
  3. Layer shredded chicken evenly over the chips.
  4. Pour enchilada sauce over the chicken.
  5. Sprinkle cheese on top.
  6. Bake for 20 minutes or until cheese is melted and bubbly.
  7. Remove from oven and top with sour cream, cilantro, onion, and jalapeño.
  8. Serve warm.
