Description
Cold soba noodle salad bites are a refreshing and light dish perfect for summer. These bite-sized portions combine the nutty flavor of soba noodles with crisp vegetables and a tangy dressing.
Ingredients
- 200g soba noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 2 green onions, thinly sliced
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp grated ginger
- 1 tbsp toasted sesame seeds
Instructions
- Cook soba noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, mix sesame oil, soy sauce, rice vinegar, honey, and grated ginger.
- Toss cooled noodles with the dressing.
- Add julienned cucumber, carrot, and green onions. Mix well.
- Sprinkle with toasted sesame seeds.
- Serve chilled in small portions.
Notes
- Rinse noodles thoroughly to remove excess starch.
- Adjust soy sauce to taste if needed.
- Can be prepared ahead and refrigerated.
