Description

Cold soba noodle salad bites are a refreshing and light dish perfect for summer. These bite-sized portions combine the nutty flavor of soba noodles with crisp vegetables and a tangy dressing.


Ingredients

  • 200g soba noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 green onions, thinly sliced
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp grated ginger
  • 1 tbsp toasted sesame seeds


Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, mix sesame oil, soy sauce, rice vinegar, honey, and grated ginger.
  3. Toss cooled noodles with the dressing.
  4. Add julienned cucumber, carrot, and green onions. Mix well.
  5. Sprinkle with toasted sesame seeds.
  6. Serve chilled in small portions.
