A comforting and creamy soup that combines the rich flavors of Alfredo sauce with the heartiness of lasagna.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 jar (15 oz) Alfredo sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 8 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the onion and garlic to the pot and cook until softened.
- Stir in the chicken broth, Alfredo sauce, diced tomatoes, and Italian seasoning. Bring to a boil.
- Add the broken lasagna noodles and reduce heat to a simmer. Cook until noodles are tender, about 15 minutes.
- Stir in the mozzarella and Parmesan cheeses until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
Notes
- You can substitute ground beef with ground turkey or chicken for a lighter option.
- For a vegetarian version, omit the meat and use vegetable broth.
- Feel free to add spinach or mushrooms for extra vegetables.
