Description
A rich and creamy pasta dish featuring tender Cajun-spiced chicken and mozzarella Alfredo sauce, served over rotini pasta.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into strips
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 12 ounces rotini pasta
- 1 cup heavy cream
- 1/2 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside.
- Toss the chicken strips with Cajun seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes until fully cooked. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds.
- Pour in heavy cream and bring to a simmer. Stir in mozzarella and Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet and mix well with the sauce.
- Add the cooked rotini and toss until everything is evenly coated. Serve hot.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- For extra creaminess, add a splash of milk if the sauce thickens too much.
- Garnish with fresh parsley for added flavor and color.
