A quick and easy spaghetti dish with a creamy, spicy twist using Rotel tomatoes.
Ingredients
- 8 oz spaghetti
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook spaghetti according to package instructions, then drain.
- In a saucepan, melt butter over medium heat.
- Add Rotel tomatoes and green chilies, simmer for 2 minutes.
- Stir in heavy cream, garlic powder, salt, and black pepper.
- Add cooked spaghetti and toss to coat.
- Sprinkle with Parmesan cheese and serve immediately.
Notes
- Adjust spice level by using mild or hot Rotel.
- Add cooked chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 2 days.
