Description
Crispy, golden avocado fries with a crunchy outer layer and creamy center. A delicious snack or side dish.
Ingredients
- 2 ripe avocados
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut avocados into thick slices.
- Place flour in a shallow bowl. Mix eggs in another bowl. Combine breadcrumbs, salt, pepper, garlic powder, and paprika in a third bowl.
- Coat each avocado slice in flour, dip into beaten eggs, then roll in breadcrumb mixture.
- Place coated slices on the baking sheet. Drizzle with olive oil.
- Bake for 12-15 minutes, flipping halfway, until golden and crispy.
- Serve warm.
Notes
- Use firm but ripe avocados to prevent mushiness.
- For extra crispiness, spray with cooking oil before baking.
