Description

Crispy baked cauliflower tater tots are a healthy alternative to traditional potatoes. They’re easy to make and perfect as a snack or side dish.


Ingredients

  • 1 medium head cauliflower, chopped into florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Steam cauliflower florets until tender, about 5-7 minutes. Drain well and let cool.
  3. Place cauliflower in a food processor and pulse until finely chopped.
  4. Transfer cauliflower to a bowl. Add cheddar cheese, Parmesan, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Shape the mixture into small tater tot shapes and place on the baking sheet.
  6. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  7. Serve warm with your favorite dipping sauce.

Notes

  • Press out excess moisture from the cauliflower to prevent soggy tots.
  • For extra crispiness, spray the tots lightly with oil before baking.
  • Store leftovers in an airtight container for up to 3 days.
