Creamy and comforting potato soup made easy in a crock pot. Packed with flavor and perfect for a cozy meal.
Ingredients
- 6 cups diced potatoes
- 1 cup diced onion
- 3 cloves minced garlic
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Add potatoes, onion, garlic, and chicken broth to the crock pot.
- Cook on low for 6 hours or high for 3 hours.
- Use a potato masher to slightly mash the soup.
- Stir in heavy cream, cheese, bacon, salt, pepper, and paprika.
- Cook for an additional 30 minutes on low.
- Serve hot with extra cheese and bacon if desired.
Notes
- For a thicker soup, mash more potatoes.
- Store leftovers in the fridge for up to 3 days.
