Description
A creamy and comforting broccoli and cheddar soup made easily in a crockpot.
Ingredients
- 4 cups broccoli florets
- 3 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Add broccoli, onion, garlic, and vegetable broth to the crockpot.
- Cook on low for 4 hours.
- Stir in heavy cream and shredded cheddar cheese.
- Cook for an additional 30 minutes until cheese melts.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, blend half of the mixture before adding cheese.
- Store leftovers in an airtight container for up to 3 days.
