Description
A rich and moist chocolate pecan cake with a deep cocoa flavor and crunchy pecan texture.
Ingredients
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
- Stir in boiling water. The batter will be thin.
- Fold in pecans.
- Pour batter into prepared pan and bake for 35-40 minutes, until a toothpick comes out clean.
- Cool completely before serving.
Notes
- For extra richness, top with chocolate ganache.
- Store in an airtight container for up to 3 days.
- Substitute walnuts if pecans are unavailable.
