Ingredients
- 2 boneless, skinless chicken breasts

- 1/2 cup black beans, drained and rinsed

- 1/4 cup diced tomatoes
- 1/4 cup shredded lettuce
- 2 tbsp sour cream
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- Season chicken breasts with chipotle seasoning, salt, and pepper.
- Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked.
- Let the chicken rest for 5 minutes, then slice into strips.
- Assemble the bowl with cooked brown rice, black beans, corn, tomatoes, lettuce, and sliced chicken.
- Drizzle with sour cream and lime juice. Serve immediately.
