Ingredients

  • 1 lb large shrimp, peeled and deveined (tail-on)

  • 2 large eggs
  • 1 tbsp water
  • 1 1/2 cups shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • Vegetable oil (for frying)


Instructions

  1. Pat shrimp dry with paper towels.
  2. Mix flour, salt, and pepper in a shallow bowl.
  3. Whisk eggs and water in another bowl.
  4. Combine coconut and panko in a third bowl.
