Easy cornbread muffins recipe for a quick and delicious side dish.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin.
- Mix cornmeal, flour, sugar, baking powder, and salt in a bowl.
- Add milk, vegetable oil, and egg. Stir until combined.
- Pour batter into muffin cups, filling each 2/3 full.
- Bake for 15-20 minutes until golden brown.
- Let cool for 5 minutes before serving.
Notes
- For extra flavor, add 1/2 cup shredded cheddar cheese.
- Store leftovers in an airtight container for up to 3 days.
- Double the recipe for larger batches.
