Ingredients
- 4 cups corn kernels (fresh or frozen)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, juiced
- 2 tbsp chopped cilantro
- Salt to taste
Instructions
- Cook corn kernels in a skillet over medium heat for 5-7 minutes until tender.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Add cooked corn to the sauce and stir well.
- Divide the mixture into serving cups.
- Top with crumbled cotija cheese and chopped cilantro.
