Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, butter, and powdered sugar to form the crust. Press into an 8×8-inch baking pan.
  3. Bake crust for 15-20 minutes until lightly golden.
  4. Whisk eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt for the filling.
  5. Pour filling over the baked crust and return to the oven for 20-25 minutes until set.
  6. Cool completely before dusting with powdered sugar and cutting into bars.
