Description

Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 1/2 cups marinara sauce
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season eggplant slices with salt and let sit for 15 minutes to remove excess moisture.
  3. Pat eggplant dry with paper towels.
  4. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
  5. Dredge each eggplant slice in flour, dip in egg, then coat with breadcrumb mixture.
  6. Heat olive oil in a pan over medium heat and fry eggplant slices until golden brown on both sides.
  7. Place fried eggplant slices on a baking sheet.
  8. Top each slice with marinara sauce and mozzarella cheese.
  9. Bake for 10-15 minutes until cheese melts.
  10. Stack slices and serve warm.
