Description

A quick and easy breakfast pizza made with English muffins, topped with eggs, cheese, and your favorite toppings.


Ingredients

  • 2 English muffins, split
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 slices cooked bacon, crumbled
  • Salt and pepper to taste
  • 1 tbsp butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toast the English muffin halves lightly.
  3. In a pan, melt butter and sauté bell peppers and onions until soft.
  4. Whisk eggs, season with salt and pepper, and scramble in the pan.
  5. Place toasted English muffins on a baking sheet.
  6. Top each half with scrambled eggs, sautéed veggies, bacon, and cheese.
  7. Bake for 5-7 minutes until cheese melts.
  8. Serve warm.

  • Swap bacon for ham or sausage if preferred.
