Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 cup beef broth
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and cook until caramelized, about 15 minutes.
  3. Season chicken with salt, pepper, and thyme.
  4. Push onions to the side and add chicken to the skillet.
  5. Cook chicken for 5 minutes per side.
  6. Pour beef broth into the skillet.
  7. Cover and simmer for 10 minutes.
  8. Sprinkle Gruyère and Parmesan cheese on top.
  9. Broil for 2 minutes until cheese melts.
  10. Serve hot.
