Description

A delicious and hearty dish combining tender chicken, caramelized onions, and savory rice baked to perfection.


Ingredients

  • 2 lbs chicken breast, diced
  • 2 large onions, thinly sliced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium heat. Add onions and cook until caramelized.
  3. Add diced chicken, thyme, garlic powder, salt, and pepper. Cook until chicken is no longer pink.
  4. Stir in rice and chicken broth. Bring to a simmer.
  5. Transfer mixture to a baking dish, top with shredded Gruyère cheese.
  6. Bake uncovered for 25-30 minutes, or until rice is tender and cheese is golden.
  7. Let rest for 5 minutes before serving.

Notes

  • For extra flavor, add a splash of white wine when cooking onions.
  • Substitute Gruyère with Swiss cheese if preferred.
