Description

A comforting and flavorful casserole combining tender chicken, caramelized onions, and rice in a rich broth.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 large onions, thinly sliced
  • 1 cup uncooked long-grain rice
  • 2 cups beef or chicken broth
  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat butter and olive oil over medium heat. Add onions and cook until caramelized, about 15 minutes.
  3. Stir in thyme, salt, and pepper.
  4. In a baking dish, layer cooked rice, shredded chicken, and caramelized onions.
  5. Pour broth over the mixture.
  6. Top with shredded cheese.
  7. Bake for 25-30 minutes, or until cheese is golden and bubbly.
