Fluffy and nutritious pancakes made with Greek yogurt and fresh berries for a protein-packed breakfast.
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup Greek yogurt
- 1 large egg
- 2 tbsp honey
- 1/2 cup milk
- 1 cup mixed berries (blueberries, strawberries, raspberries)
- 1 tbsp butter or oil for cooking
Instructions
- Whisk flour, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix Greek yogurt, egg, honey, and milk.
- Combine wet and dry ingredients, then gently fold in berries.
- Heat butter or oil in a pan over medium heat.
- Pour 1/4 cup batter per pancake and cook until bubbles form (about 2-3 minutes).
- Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with extra berries and honey if desired.
Notes
- Use plain Greek yogurt for best results.
- Frozen berries work if fresh ones aren’t available.
- Don’t overmix the batter for fluffy pancakes.
