Description

Fluffy and protein-packed pancakes made with Greek yogurt for a healthy and delicious breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Greek yogurt
  • 1 large egg
  • 1/2 cup milk
  • 1 tbsp melted butter or oil
  • 1 tsp vanilla extract


Instructions

  1. Mix dry ingredients in a bowl.
  2. In another bowl, whisk yogurt, egg, milk, butter, and vanilla.
  3. Combine wet and dry ingredients, stirring until just mixed.
  4. Heat a lightly greased pan over medium heat.
  5. Pour 1/4 cup batter for each pancake.
  6. Cook until bubbles form, then flip and cook the other side.
  7. Serve warm with toppings of your choice.

Notes

  • Do not overmix the batter to keep pancakes fluffy.
  • Adjust milk for thicker or thinner batter.
