Fluffy and protein-packed pancakes made with Greek yogurt for a healthy and delicious breakfast.
Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup Greek yogurt
- 1 large egg
- 1/2 cup milk
- 1 tbsp melted butter or oil
- 1 tsp vanilla extract
Instructions
- Mix dry ingredients in a bowl.
- In another bowl, whisk yogurt, egg, milk, butter, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed.
- Heat a lightly greased pan over medium heat.
- Pour 1/4 cup batter for each pancake.
- Cook until bubbles form, then flip and cook the other side.
- Serve warm with toppings of your choice.
Notes
- Do not overmix the batter to keep pancakes fluffy.
- Adjust milk for thicker or thinner batter.
- Use plain or flavored Greek yogurt.
