Ingredients

  • 4 cod fillets (6 oz each)
  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 1/2 cup Greek yogurt
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat grill to medium-high heat.
  2. Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast in a skillet for 10 minutes.
  3. Season cod fillets with salt, pepper, and 1 tbsp olive oil.
  4. Grill cod for 4-5 minutes per side until flaky.
  5. Mix Greek yogurt, dill, lemon juice, and garlic to make the sauce.
  6. Serve cod with roasted tomatoes and drizzle with dill sauce.
