Ingredients
- 4 cod fillets (6 oz each)
- 1 pint cherry tomatoes
- 2 tbsp olive oil
- 1/2 cup Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast in a skillet for 10 minutes.
- Season cod fillets with salt, pepper, and 1 tbsp olive oil.
- Grill cod for 4-5 minutes per side until flaky.
- Mix Greek yogurt, dill, lemon juice, and garlic to make the sauce.
- Serve cod with roasted tomatoes and drizzle with dill sauce.
